Possibly the king of Carnival food and a real taste sensation! The goat, or mutton if your butcher doesn’t have goat, should be browned before being slow cooked. The usual essential ingredients include scotch bonnet chilli, thyme, ginger, garlic, onions, curry powder, lime juice, tomatoes and curry leaves. Garnish with roughly chopped coriander and eat with fresh roti. Carnival just isn’t complete without curry goat.
