Fried Plantains

A delicious side dish, and for best results be sure to use only very ripe plantains. Simply cut the ends off and peel the plantain. Then slice into strips or diagonally for long ovals, the aim being to increase the surface area of the pieces for the best possible caramelisation. Once fried golden and caramelised in their own sugar, pat dry and season with flakes of sea salt.
