This is the Jamaican breakfast for carnival! Ackee is actually a fruit which must be properly picked and then boiled to deal with its toxins, but often referred to, and used, as a vegetable. Creamy, buttery with a delicate texture it almost looks like scrambled egg. The ackee is prepared with saltfish to make a delicious breakfast. The delicacy of the prepared fruit means it is added towards the end of cooking and stirring is best avoided since it will break up easily. Super served with fried plantains and Caribbean dumplings.
