Jerk Chicken

Spicy, crispy, barbecued chicken is native to Jamaica where originally it was cooked over fires fuelled with allspice wood. Pork and goat are also jerked with the distinctive seasoning of hot peppers and allspice berries. There is much debate as to whether a dry rub of onion, fresh thyme, salt, nutmeg, cinnamon, black pepper, scotch bonnet chilli and of course, allspice is more authentic than a marinade adding oil, unrefined brown sugar and lime juice.

Jerked, crispy chicken thighs and drumsticks work well for carnival food on the go.
