Rice and peas

Rice and peas is a Caribbean staple and traditionally always served on Sundays. The peas are actually beans, usually black beans or kidney beans and the rice is generally steamed long-grain rice. Pork fat is an essential ingredient (or vegetable stock and coconut cream for vegetarians) as are scotch bonnet chillies kept whole for flavour rather than heat. Allspice, garlic, chopped onions and thyme also feature.
