Saltfish Fritters

Crispy on the outside and soft inside, a real taste of the Caribbean. Made with dried, salted codfish, these light fluffy fritters are super with pepper sauce. It is very important to soak the fish in cold water for between one and three days, changing the water every so often, to get rid of the salt. The recipe usually includes paprika, onion, scotch bonnet chilli, parsley, thyme and flour and egg to bind.
